Cucumber & Radish Salad

Cucumber & Radish Salad

A real taste of freshness, this salad blends the sharp bite of radish, onion and coriander with the mild cucumber and carrot flavours. The mint and lime bring it all together!

Ingredients

20 radishes, finely sliced, approx. two small packets
1 large cucumber, finely sliced
1 carrot, thinly sliced
1 apple, chopped – I like granny smiths in this salad
2-3 spring onions, sliced
small handful fresh mint leaves roughly chopped
small handful coriander leaves roughly chopped – flat parsley if you’re not a fan of coriander

For the Dressing

drizzle of good quality extra virgin oil olive oil,
juice of one lime
sea salt and black pepper to taste

Method

Combine the ingredients in a bowl and mix thoroughly.
Drizzle with olive oil and add lime juice to serve.
Season to taste – it’s that easy!

Chefs Notes

If you like a little sweetness add a tiny drizzle of honey to the oil and lime, juice, season and combine well. Pour over salad and toss well to ensure all your ingredients are well dressed and serve immediately. This salad is only good when freshly made, it does not keep well as the water from the dressing causes the cucumber to become soggy and this is not a good thing!

Options

You can add some sliced celery, red onion and spinach leaves for more crunch and lots more vitamins, minerals and antioxidants.
